Halloween Week - Pumkin Soup Kick Off



My friend Megan made this wonderful pumpkin soup recipe for me recently and has graciously given me the recipe. I don't know its origins but it's simple to make and delicious!


1 Tbsp. olive oil

1 onion chopped (1 c.)

2 carrots chopped (1 c.)

2 cloves garlic minced

2 14 oz. cans chicken broth

2 15 oz. cans pumpkin

1 14 oz. can coconut milk

1/8 tsp. ground red pepper

1 1/4 tsp. salt


Saute onion and carrot in oil for 5 minutes. Add garlic and cook 30 seconds more. Add 1 can broth and simmer 10 minutes. Cool 10 minutes. Blend in blender until smooth. Return to pot and add pumpkin, coconut milk and rest of broth. Bring to a simmer. Stir in salt and pepper. Serve with lime juice (optional).
